When Christina della Valle sailed into Airlie Beach 20 years ago, she had no idea she would become one of the few Beefalo breeders in Australia. Now, more than two decades later, she runs a small but successful Beefalo farm on the family’s 200 acre property, off Conway Road. A cross between American Bison (American Buffalo) and cattle, Beefalo is a lean, healthy red meat, low in cholesterol and high in protein. Add to that the fact Christina’s animals are all grass fed and she doesn’t believe in hormones, and it’s no wonder the tasty meat is taking off around the Whitsundays.
Two
years ago she started a new venture: Free range Berkshire Gold pigs.
The placid black pigs with white markings graze in the paddock, only eat
top quality vegetarian feed and do not get any growth promotants in
their lives, resulting in tender, tasty, juicy pork.

18 months ago Don Cameron came to the Whitsundays on holiday and found Master Butchers Whitsunday, a business running for 27 years, in need of a new owner. Today Don and partner Karen along with a full-time butcher and 1st year apprentice have kept MBS community reputation strong. Don specialises in gourmet, handmade sausages (and even uses Beefalo in many of his recipes). The Spanish Chorizo sausage, Master Butchers Whitsundays recently won the coveted top prize at the Tropical Queensland Sausage King 2010 competition, advancing to the state wide competition to be held in August.
